Grilled Cheese Sundays

I do not live in Chicago, but it sure sounds like the Windy City outside my house right now. Sheesh.
But I love it. I love that the Lord creates the wind to move as it does and you can't even see it. He's too cool. Cooler than too cool.

Anyway, I am BACK. And it's still January! Eeee.

And again, this is a random post. One of those "on a whim" I-have-no-idea-what-I'm-about-to-write posts. Mainly because I keep adding to those other drafts yet to be published. ;) You get it.

Ok, maybe I have a slight idea of what I want to write about. I in no way am wanting to turn this into a food blog or anything like that. Kudos to those who do, but I like to read other people's blogs for that sort of thing, not my own. However. My husband and I have been trying to eat healthier the past 2 weeks. Not that we've never eaten healthy before, but we're just putting forth a little more effort. We're not full fledged into any one particular clean eating lifestyle, but we do try different recipes from here and there and try to maintain a good balance. I can hear the super food bloggers now on my lack of rigidity. Hey, I made my own granola today, I won't give up my Fage and my ranch dip, and at least my notebook is getting full of meal planning lists! Plus, it keeps us away from Chick-fil-A...which is sometimes very sad. But you do need some fun every once in awhile--otherwise this healthy eating (while good for you) feels a little like jail.

I've actually been eating breakfast and taking healthy snacks along with lunch to work! And that has only happened on rare occasions! Good thing I asked for a cute yellow chevron lunch bag for Christmas (thanks Mom)!

But then come Sunday afternoons...which in this house, are unofficially becoming unhealthy Grilled Cheese Sundays. (Isn't that fun?) :)

I just want to say I think I made the best grilled cheese this last Sunday. Yes, that is what this post is all about. My husband kept asking me what was in it and he said it was his favorite sandwich I've ever made him. That's sweet. And makes me feel like a real wife. I would really love to make one for dinner every night this week, but my meal planning list says otherwise. 

So. Just in case you might be interested and have a craving:

Rye bread (the outsides lightly brushed with olive oil and sprinkled with seasoned salt)
Spicy mustard or Mayonnaise (on one side)
Pesto (on the other side)
Shredded chicken
Spinach leaves
Pepper jack cheese
Maple hickory seasoning (sprinkled throughout the layers)

Smash it all together in your panini maker, and from there, it's pretty much an explosion of flavor in your mouth.
